Servings: 2 people

 

Ingredients:

  • ½ lb of boneless chicken breast
  • 1 teaspoon of Pitaya jam
  • ½ liter of of orange juice
  • 2 teaspoons of sugar
  • 2 limes
  • 2 teaspoons of cornstarch
  • 1 oz of margarine
  • 2 teaspoons of parsley
  • Salt & pepper to taste

Preparation:

 

Salt and pepper your chicken breasts and then grill in a medium size pan with a little olive oil until they are fully cooked and have a golden crust.

 

To prepare the sauce, you will add ½ a cup of water and the pitaya jam in saucepan over  medium heat and bring to a boil. Add the margarine, orange juice and lime juice (it will be a sweet sour sauce). Add a little more water if it's too sweet.

 

To thicken, add the cornstarch in a small bowl and dissolve it in water. Once it has fully dissolved add it to the sauce.  Stir until it reaches the thickness that you want for the sauce.

 

Add it on top of the chicken and serve.

 

Serve with steamed rice and veggies and pair with a cold white wine of your choice.
